These cinnamon roll muffins have that perfect balance of sweet and spice that reminds me of a slow Sunday morning with a fresh baked cinnamon roll 🙂 Gluten-free and naturally sweetened, these muffins have protein, carbs and fiber that will leave you feeling good about what you (and your family!) are putting into your body. They are a sweet treat that pack easily for when you’re on the go and store well for a guilt-free snack throughout the week.
Ingredients:
1 cup oatsÂ
1 cup protein powderÂ
1 cup unsweetened applesauceÂ
1 cup soy milk (or any plant milk)
2 large eggsÂ
â…“ cup maple syrupÂ
2 tsp baking powderÂ
1 tbsp cinnamonÂ
½ tsp saltÂ
½ cup chopped pecansÂ
½ cup chopped dates
Directions:
In a bowl, combine: oats, protein powder, baking powder, cinnamon, and salt.Â
In another bowl, combine: applesauce, milk, eggs, and maple syrup.Â
Mix wet and dry ingredients together, then add pecans and dates.Â
Pour into lined muffin tin.
Bake at 350F for 20 minutes or until toothpick comes out clean.
