This feta and olive bread dip is simply divine! It feels fancy and indulgent, but is quick to whip up and light on the stomach as an appetizer. My recent trip to Greece has inspired me to make more food with Mediterranean influences. Not only does this bread dip taste amazing, but you are getting a good amount of energy, some protein from the feta, omegas from the olives and olive oil, and I’ll mention again, a TON of flavour from all those herbs combined. What more could you ask for to whet your appetite? Choose whatever you want to dip into it, but you can’t go wrong with a delicious slice of freshly baked sourdough bread!
Ingredients:
1/2 cup olive oil
1/4 cup balsamic vinegar
2 tbsp chili oil
1 tsp chili flakes
1.5 cups olives, chopped
generous cup crumbled feta (200g)
2 tbsp fresh parsley
2 tbsp chives
1 tsp dried basil
1 tsp dried oregano
freshly ground pepper
Directions:
Mix the olive oil, balsamic vinegar and chili oil in a bowl.
Add the chopped olives, crumbled feta, and spices. Mix again until the ingredients look well combined with the oil/vinegar.
Serve with bread, crackers, naan, pita, or whichever dipper you desire!
