Prep Time: 15 mins | Cook Time: 20 min. with micro & stove / 50 min with oven & stove | Total Time: 35 mins / 1 hour
Submission note: High in vitamin A, C, B6, folate, fibre, magnesium, potassium – in other words, squash is full of goodness!
Ingredients
- One large spaghetti squash
- 3 chicken breasts, or 3 turkey sausages, or 1 pkg extra firm tofu
- 1 head of broccoli
- 6 or 7 cremini mushrooms
- 1 red or any bell pepper
- 1 small red onion
- 1 clove of garlic
- 1 can of diced tomatoes
- 3 or 4 leaves of fresh basil
- Salt & pepper
- 2 tbsps Extra virgin olive oil (I love Tuscan Herb from the Urban Gourmet in Pembroke!)
- Fresh parmesan or asiago cheese (optional)
Optional Ingredients:
- This recipe is delicious with all vegetables you love! The more colour the better! Snow peas, carrots, zucchini, celery, cauliflower, brussel sprouts, asparagus, kale, spinach, to name a few more 😉 Other fresh spice ideas: oregano, chives, parsley, cilantro
For squash, choose the method you prefer:
- Microwave directions: Cut in half and scoop out seeds from middle. Place one half in microwave safe dish face down with ¼ inch of water. Cook for 12 minutes. Remove and set aside. Do the same for the other half.
- Oven directions: Preheat oven to 400º and line a baking pan with parchment paper. Cut in half and scoop out seeds. Brush each half with olive oil and sprinkle with a little salt & pepper. Place each half on the pan with the cut side facing upwards. Roast for 40 minutes.
Cooking Directions
- While you are cooking the squash, chop all vegetables you are going to add.
- Crush the garlic clove in a medium fry pan and add the chopped onion.
- Add your meat/protein of choice to pan and cook, then set aside.
- Saute vegetables in another pan until al dente.
- Once both done, blend together and pour 2tbsp of olive oil and diced tomatoes over mixture.
- Shred the squash with a fork to make noodles.
- Serve and sprinkle grated parmesan or asiago cheese on top and fresh ground pepper.
- ENJOY!!

Play around with this recipe to find the flavours right for you. You can always do a different topping with the other half!! Spaghetti squash is also tasty baked as a casserole using it as the base! Could do tomatoes, basil, onions, cheese. Have fun with it and let me know how it goes! XO

You can also cook spaghetti squash in an insta pot for quick cook too.
It takes about 15 minutes according to the recipe I found. Just a little Fyi.

Hey Leslie…love recipes using spaghetti squash…I enjoy it as the weirdest interesting veg with so much potential…i.e the garlic load & it’s consistency is so substantial!
