Ingredients:
2 cups frozen raspberries
1 cup shredded coconut, plus more for decorating the tops
1/4 cup maple syrup
1/2 cup vanilla protein powder
1 3/4 cups dark chocolate
2 Tbsp coconut oil
Directions:
In a blender, blend together the raspberries, protein powder, shredded coconut and maple syrup.
Place raspberry mixture into a loaf pan, patting it down with the back of a spoon to ensure it is spread evenly. Put in the freezer until solid, roughly 2 hours.
Melt chocolate and coconut oil together either in the microwave or in a double boiler over the stove.
Cut frozen raspberry mixture into bars and dip in to chocolate mixture. Ensure the bars are fully coated in chocolate, then sprinkle shredded coconut over the top
