This is going to be the best summer salad you will make all season! It’s a twist on a recipe from Half-Baked Harvest. Peach Perfect Burrata Salad is exactly the kind of refreshing, flavourful and delicious salad that you will want to be bringing to backyard barbecues, or whipping up for yourself for the most delightful lunch in the warmer weather. The tartness of the cherries paired with the sweetness of summer peaches, and the creaminess of a fresh burrata, hits all the tastebuds just right!
It might look complex and intimidating, but don’t be fooled! Even though this salad is fit for an evening of entertainment, it is easy to whip up if you have the ingredients on hand. I have made this Peach Perfect Burrata Salad multiple times this summer already, it’s just that fresh and good!

Ingredients:
1 handful of arugula
1 handful of spinach
1 1/2 cup of grape(or cherry) tomatoes, cut in half
1 1/2 cups of fresh cherries, pitted and cut in half
3-4 ripe peaches, sliced
1 or 2 balls of burrata
1/4 cup of lightly roasted pumpkin seeds
1/3 to 1/2 cup of fresh basil leaves
Directions:
Place the pumpkin seeds in a dry skillet or pan over medium heat and roast for 1-2 minutes. Remove from heat and let cool.
In a large bowl, mix together the arugula, spinach, peaches, tomatoes and cherries.
Place the burrata on top of the mixed salad and cut open.
Top with roasted pumpkin seeds and fresh basil leaves.
