What better way to start your day than with a healthy brunch, giving you that satisfying crunch as you bite into a delicious avocado toast topped with crunchy seeds, nutrient dense veggies and protein packed halloumi 🙂 Yummy! This toast is topped with so much protein, antioxidants, minerals and fiber. Everything you need to fuel you through the day! The best part about this breakfast, asides from being quick and nutritious of course, is that it’s completely customizable. You choose which toppings you want to include or leave out, just don’t skimp on the good stuff 😉

Ingredients:
Toast
Avocado, sliced
Beets, cooked and diced
Halloumi
Sprouts
Cherry or grape tomatoes
Micro greens
Pumpkin seeds
Hemp hearts
Directions:
Poach your eggs in a pan on the stove to your preference. I prefer a soft poach so only kept them in the water for 4 minutes.
In a separate pan, toast the halloumi on medium heat until brown. Then flip and brown on the other side, about 2-3 minutes a side.
Toast your bread to your liking. Remember, use what works for you, whether gluten-free, multigrain, sourdough or something else!
Assemble the toast: avocado on the bottom followed the fried halloumi, then top with diced beets, sliced tomatoes, micro-greens, sprouts and seeds.
Drizzle a bit of flavoured olive oil or balsamic vinegar if desired!
Note: this recipe is soooo adaptable so if you don’t like a certain topping, or if you want to add more, change it to your hearts content!
