Watermelon Pizza

Ingredients:

  • 1 medium watermelon, preferably without seeds
  • 3/4 cup goat feta
  • handful of mint
  • extra virgin olive oil
  • white balsamic vinegar
  • fresh ground pepper

Directions:

  1. Slice the watermelon, and cut the watermelon round into desired size pieces.
  2. Dress the watermelon round with crumbled feta, mint leaves and ground pepper.
  3. Drizzle the olive oil and white balsamic over the round, to your liking.
  4. Enjoy!
