4 cups vegetable or chicken broth (add 2 more cups if you want more watery)
1 can of chickpeas (drained or rinsed)
3 cups of spinach (or kale or a combo of both) – stems removed
3 tbsp tomato paste
½ tsp cumin
½ tsp oregano
2 tsp grated lemon zest
Salt & pepper to taste
Optional Ingredients:
Any other vegetable, such as greens of leeks or green onion, swiss chard, collards, mustard greens, or cilantro.
Directions:
In a large pot saute the onions, celery, carrots, & garlic in the oil. Add the diced tomatoes, tomato paste, broth, and spices. Boil approx 8-10 minutes. Add the chickpeas, spinach/kale & salt. Heat another few minutes, add grated lemon zest, stir and just before serving, sprinkle the lemon zest and a squeeze of fresh lemon!
