Ingredients:
12 wonton wrappers
5 large eggs
4 turkey sausages (I used chorizo today but has way more fat)
1/3 cup finely diced onion, red pepper, yellow pepper
1/4 cup freshly chopped spinach or kale
1 cup of shredded skim mozzarella cheese (omit or add less if you want to keep it a little cleaner)
1/4 cup milk (it is delish without it so up to you)
Salt and Pepper
Instructions:
Preheat oven to 350.
Spray a 12 cup muffin pan with coconut oil spray or a non stick spray. Line each with a wonton wrapper.
In a pan cook sausage. When cooked, turn off heat and add spinach, red pepper and onion. Set aside.
Whisk together eggs, milk and salt. Stir in cheese. (save a bit of cheese to sprinkle on top)
Spoon egg mixture into wonton cups and add sausage mixture. Sprinkle with remaining cheese.
Bake for 20 minutes or until eggs are fully set.

Can freeze them for quick healthy eats on the go! 🙂
Could also add:mushrooms, broccoli, tomatoes, asparagus, zucchini, etc etc
The only negative is that wonton wrappers contain gluten 🙁 But you can make as crustless quiches if you are gluten sensitive 😉
