Ingredients:
- 1cup dates
- 2T cocoa powder
- 1/4cup almonds (sliced, slivered, pieces are all fine since they will be blended!)
- 1/2cup peanut butter, creamy
- 1t vanilla extract
- 1T ground flax, or chia seeds
- 1T water
- pinch of salt
Directions:
- Blend the dates, peanut butter, cocoa powder, almonds, ground flax (or chia seeds), vanilla extract and salt in a food processor until all ingredients for a thick dough. If the ingredients are not coming together nicely, as in not sticking, add the tablespoon of water. Once you can form a ball with the dough, you have the correct consistency.
- Roll out the dough into balls roughly 3cm in diameter.
- Store these bites in an airtight container in the refrigerator. They will firm up further as they chill, and can keep up to a week in the fridge.
Note:
These Pure Energy Bites are an excellent distraction for your sweet tooth from all the refined and processed sugars out there! You really get that sweet kick from the dates, and the chocolatey goodness from the cocoa.
