Ingredients:
- ½ cup peanut butter
- 1 cup of grated apple or ½ cup of unsweetened apple sauce
- 1 cup large, pitted dates
- ⅓ cup hemp hearts
- 1 cup large flake oats
- 1 cup raw pumpkin seeds
- 1 ½ tbsp raw cocoa powder
- 2 tbsp honey
Optional Ingredients:
½ tsp ground cinnamon or ginger (to help circulation), ¼ ground flaxseeds for more omega 3’s, ½ cup of almond butter (or any nut butter) instead of peanut butter. 2 tbsp maple syrup instead of honey.
Directions:
- Soak the dates in water for 5 minutes.
- Grate apple (or skip if using applesauce) and cut the dates into small pieces.
- Mix all remaining ingredients together in a bowl until well combined and sticky enough to hold the shape of a ball.
- Take approx. 2 tbsp of the mixture at a time and roll into a ball. Place on a plate lined with parchment paper,
- Put in fridge for an hour to set before serving.
And….bite in!!
Recipe Notes: So easy to make and store, and a great filling snack for road trips!
Important Note:
Check the consistency of the energy ball and add more ingredients accordingly. If it is runny, add more oats or hemp hearts to bind it, etc. If you need a little more sweetness, add a touch more honey or maple syrup.

Made these Power Snack Bites – they are quick and easy to make and yummy to eat! I made them small enough to eat it two bites but that was plenty. I used unsweetened applesause rather than the apples which worked fine (I might use just a wee bit less next time). I stored them in the freezer (out of direct sight!) but were soft enough to eat straight from the freezer. I will definitely keep making them.
