Prep Time: 15 minutes | Cook Time: 50 minutes | Total Time: 1 hour and 5 minutes
Ingredients:
- ¼ cup balsamic vinegar
- ¼ cup avocado oil ( or olive oil)
- Thyme, garlic powder, hot sauce
- 4 chicken breasts (or salmon, or just veggies)
- 1 sweet potato chopped.
- A few small potatoes chopped in half (not too big so they cook faster)
- 3 carrots
- 1 onion
- A few broccoli florets
- A few cauliflower florets
- A handful of Brussel sprouts
Optional Ingredients:
- Parsnips, turnip, squash, celery, eggplant, zucchini, etc…
Maple syrup, dijon mustard, teriyaki sauce, would all be great to drizzle over chicken and vegetables. Just go easy on packaged sauces.
Directions:
- Set oven for 370°
- Put chicken breasts in a bag and add balsamic vinegar, dash of thyme, add some hot sauce (if you like a bit of spice). Shake well and let sit while prepping the rest.
- Chop vegetables of choice. Drizzle with the oil and season with salt and pepper.
- Place the chicken and vegetables on a baking sheet or in an oven safe dish and place in middle rack of oven for 45-50 minutes.
