Submission Note: My friend Moira made me this gorgeous salad when she had me for lunch recently. Of course i took a pic of it as I wanted to try to repeat her dish. This is the pic of the original at Moira’s! Thank you my friend, I know everyone will enjoy your creation as much as i did!
Ingredients for Salad:
- 1 bag of fresh spinach or mixed greens
- 1 Spanish onion
- 1 red pepper
- 2 tomatoes
- 1 cucumber
- 1 can of mixed beans (rinsed)
- Hemp hearts (a good handful)
- Goat cheese
Optional Ingredients: you can add any of your favourite veggies to this salad – kalamata olives, feta cheese, orange/yellow peppers, mushrooms, sundried tomatoes, alfalfa, etc…
Directions:
In a large bowl add the mixed greens and then add the above vegetables chopped as you prefer. Toss the salad with all ingredients, then sprinkle goat cheese and hemp hearts on top. Add dressing.
Ingredients for Maple Balsamic Dressing:
- 1 cup extra virgin olive oil (set aside til the end)
- ½ cup of balsamic vinegar
- ¼ cup of maple syrup
- 2 tsp dijon mustard
- Salt & pepper to taste
Optional Ingredients: honey instead of maple syrup, dry mustard instead of dijon, some cayenne pepper to give it more of a bite, etc…
Directions for Maple Balsamic Dressing:
Mix/blend all ingredients except the olive oil. Once blended well, add the olive oil. There should be lots leftover so you can store in the fridge for future salads!
Recipe Notes: I decided to share an easy salad recipe with you because if you are like me, you may tend to keep using the same ingredients over and over again! So here is a new dressing recipe for you and maybe some ideas to shake it up! Hope you enjoy it!
