Ingredients:
- 1/4 watermelon, cubed
- 1/2 cantalope, cubed
- 1/2 honeydew melon, cubed
- 1/3 cup feta cheese, cubed
- 1/3 cup herbed goat cheese
- Handful of fresh mint
- 1 lime
- 2 T extra virgin olive oil
Directions:
- Cube the melons and feta into a bowl.
- Crumble the goat cheese into the melon bowl and mix in.
- Roughly chop the mint and squeeze the lime over top the salad.
- Drizzle the extra virgin olive oil and give the salad a toss.
- Enjoy!!
