Ingredients:
- 1 med/large turnip peeled and cut
- 2-3T of butter
- 1/2 cup dried cranberries
- 2/3 cup maple syrup (less if you want a stronger turnip taste)
- 1/4 walnut pieces
- Handful of fresh or dried parsley
- Salt & pepper
Directions:
- Peel and cube turnip. Cook in a pot on the stove top until soft. Drain & mash well.
- Add butter to mashed turnip and mix.
- Add cranberries and maple syrup to turnip mixture and blend together.
- Place in baking dish and bake uncovered at 400F for 20-30 minutes, or until dish is heated through.
- Once out of oven, sprinkle with walnuts and parsley.
