Ingredients:
- 1 tbsp olive oil
- 1 onion chopped
- 5 cloves garlic (minced)
- 3 cups of vegetable broth
- 3 cups of water
- 30 oz can of crushed tomatoes or tomato sauce with herbs & spices
- 6 oz can of tomato paste
- 2 cups dried green lentils
- 3 cups of black beans drained and rinsed (approx. 2 cans)
- 2 sweet potatoes
- 4 diced carrots
- 2 tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cayenne pepper
- pinch of salt to flavour
Optional Ingredients:
- White beans instead of black, marinara sauce instead of crushed tomatoes, celery is always tasty, red & orange peppers to name a few options.
Directions:
- In a pot over medium heat add olive oil, chopped onion, and garlic. Saute for 5 minutes or until onions are transparent.
- Add remaining ingredients (veg broth, water, tomatoes, paste, lentils, and carrots). Then add spices. Turn heat up to high to bring broth to a boil. Once boiling, reduce to medium heat, cover and simmer for 10 minutes.
- Add sweet potato and black beans and let simmer for 45 minutes or until lentils are tender.
- Add extra water or broth to thin out the chili if needed.
- Can garnish with cilantro, sour cream, grated cheese and avocado slices if desired 😉
