Ingredients:
- 1T olive oil
- 1 red pepper, chopped
- 1 orange or yellow pepper, chopped
- 1/4 cup of leeks
- 1/4 cup of onion
- 2 cups of spinach
- 1/2 cup crumbled feta
- salt and pepper to taste
- pinch of chili flakes
- 8-10 asparagus tops
- 4 large eggs
Directions:
- Preheat oven to 375F.
- Heat oil in a skillet at medium-low heat.
- Saute onions, leeks, asparagus tops and peppers until vegetables are tender (approximately 7 minutes).
- Sprinkle the vegetable mixture with salt, pepper and chili flakes.
- In a separate bowl, beat eggs until mixed, then pour into skillet. Cook for 3 minutes.
- Sprinkle feta and spinach on top.
- Flip the frittata and bake in the oven for 8-10 minutes.
- Serve while hot, with micro greens or some fresh salsa for an extra treat!
