Ingredients:
- 2 ripe avocados
- 2 tbsps butter
- 4 eggs (farm fresh the best)
- Pinch of salt
- Pinch of fresh ground pepper
- 2 chopped green onions
- 1 diced roma tomato
- ¼ cup of your fav cheese (goat is healthiest, medium cheddar tasty)
- Handful of cilantro
Optional Ingredients:
- Can use: chives, spanish onion, hot sauce, a different cheese, whatever topping you like. Bacon would be absolutely delicious – I left it out, but if you want to use it – cook before and then break up some pieces and place on top. Please don’t use packaged bacon bits!!
Directions:
- Cut avocado in half and remove the pit. Lay the avo halves on their sides and cut lengthwise into 2 thick slices each. Hollow out the middle making a circle (where the egg will go) with a knife.
- In a large, nonstick skillet over medium to low heat, melt 1 tbsp of butter. Place the avocado slices in the skillet and crack an egg in the centre. Season with salt and pepper.
- Cover skillet and cook until the egg is cooked to how you like them. Sprinkle cheese on top of each slice, cover with lid again and leave until cheese is melted, maybe just a minute more. Add diced tomato.
- Garnish with green onions, or chives, cilantro. (Bacon pieces if desired)
Recipe Notes: This is a low carb breakfast, full of healthy fats to keep you full and satisfied. I absolutely love greens in the morning, so i would serve this with a small mixed green salad or steamed asparagus 😉
