Enjoy this chocolate protein bark as a nutritious snack when you’re in the mood for a sweet treat or just as a quick munchie in between meals! This bark can be stored in the freezer in an airtight container for the days when you are too busy to make yourself a proper bite to eat. No guilty feelings here; it’s got loads of protein, antioxidants, vitamins and minerals 😉

Ingredients:
300g (1 large bar) dark chocolate
2 cups unsweetened peanut butter
1 scoop protein powder
5 large pitted medjool dates
1/4 cup hemp hearts
1/4 cup pumpkin seeds
1/3 cup roasted pistachios
Healthy sprinkle of coconut flakes
Directions:
Mix protein powder with peanut butter, blend well and set aside.
Melt the chocolate slowly in a double boiler over the stove.
Place parchment paper down onto a cookie sheet and pour a base layer of chocolate onto the paper.
Gently lay the peanut butter mix on top of the chocolate and spread as evenly as you can.
Cut the dates so they lay flat and place them in the chocolate and peanut butter mix.
Sprinkle hemp heart, pumpkin seeds, pistachios and the coconut flakes over top.
Place pan into the freezer until the bar is set.
Once set, cut or break up the bar into different sizes, then enjoy!
