🍅 🌿 Ingredients:
- 2 cups grape tomatoes, halved
- 1 cup of yellow(green) and orange bell peppers, diced
- ⅓ cup of cheddar
- ⅓ cup of Feta, diced
- 2 cups of canned chickpeas, rinsed and drained
- 4 green onions, finely chopped
- ¼ cup chopped fresh basil
- ¼ cup fresh lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Directions:
- Place grape tomatoes, peppers, cheese, chickpeas, onions, and basil in salad bowl.
- Toss gently.
- Whisk together lemon juice and olive oil.
- Mix into salad.
- Season to taste.
