Ingredients:
- 1 cup large flaked oats
- 1/2 cup raw walnuts
- 1/4 cup hemp hearts
- 1/4 cup shredded coconut
- 1/2 t ground cinnamon
- 1/2 t ground nutmeg
- 2 1/2 cups soft dates
- a generous 1/2 cup grated carrot
- 2 1/2 T maple syrup
- 1 T almond butter
- pinch of salt
- 1/4 cup shredded coconut, for topping
- 1/4 chia seeds, for topping
Directions:
- Add to the food processor or high speed blender, oats, walnuts, hemp hearts, coconut, cinnamon, nutmeg and salt. Blend until finely ground.
- Add dates, carrots, almond butter and maple syrup, blend well.
- Roll out 12 balls by hand from the mixture.
- Mix the shredded coconut and chia seeds for topping on a plate and roll each ball in mixture until coated.
- Enjoy immediately or refridgerate for up to a week.
Note:
These bites freeze well, and are great to have on the run, so feel free to double the recipe for some delicious snacking!
