Ingredients:
- 2 ½ cups rolled oats
- 3/4 cup almond flour
- ½ cup almond butter
- 2 eggs
- 4 tbsp real maple syrup
- 2 tsp vanilla extract
- 3 ½ tbsp coconut oil (melted)
- ½ tsp sea salt
- 2 cups of berries (can use frozen berries but must be thawed), i recommend 1 cup blackberries and 1 cup blueberries.
- 4 tbsp chia seeds
- 1 tbsp fresh lemon juice
Directions:
- Preheat oven to 350F
- Combine dry ingredients in one bowl (except the chia seeds)
- In another bowl, combine the other ingredients.
- Mix the dry and wet ingredients until well blended
- In a greased square pan, place half of the mixture in the bottom (as a base layer)
- Combine the berries, chia seeds, and lemon juice. Stir until thickened.
- Spread berry mixture on top of the oats.
- Spread the remainder of the oat mixture on top of the berries.
- Bake for 35-40 minutes until oats are browned on top.
Optional Ingredients:
Hemp hearts, flax seeds instead of chia. You can also supplement any kind of berries.
