Ingredients:
- 2 ripe bananas
- 1 1/3 cup large flaked oats
- 1 scoop protein powder
- 1/3 cup chia seeds
- 1/4 cup hemp hearts
- 1/4 cup walnuts
- 1 cup milk of choice (oat, almond, cashew, etc.)
- 1 1/3 cup mixed berries (fresh or frozen)
- handful unsweetened shredded coconut
- 1t coconut oil
Directions:
- Use the coconut oil to grease the baking dish.
- Mash the bananas and spread evenly on the bottom of the baking dish.
- Spread the oats on top of the banana layer, followed by protein powder sprinkled evenly over top.
- Add the chia seeds, hemp hearts and walnuts to the layers in the dish.
- Pour the milk over everything in the baking dish and stir until entire mixture is well blended.
- Place the berries on top and sprinkle the shredded coconut.
- Bake at 375F for 30 minutes. Dish will be done when oats are soft.
Notes:
When going to serve, consider adding a dollop of yoghurt and a dab of maple syrup on top. Makes 4 servings.
