Ingredients for Salad:
- 1 pkg arugula
- 1 pkg spinach
- 1 can chick peas (drained).
- 1 medium sized red onion sliced
- 1 cucumber diced
- 1 avocado
- 2 cups of strawberries
- 1 cup of feta cheese (I used goat feta)
Ingredients for Lemon Poppy Seed Dressing:
- 1/2 cup of extra virgin olive oil
- 1/4 cup white balsamic vinegar
- 1/4 cup of honey
- 2T Poppy seeds
- 1t dijon mustard
- 2T Greek yogurt
- Juice of half of one fresh lemon
- Salt & pepper to taste
Directions:
- For the salad, mix all ingredients together in a bowl.
- Add all ingredients for the dressing together, mix until well combined.
- Drizzle dressing over the salad, and enjoy!
Notes:
This delicious salad is made extra large! To be enjoyed by many, or it can be kept in the fridge with the salad dressing on the side, to be enjoyed all week long!
