Roasted Chickpeas

Do you crave crunchy savory snacks? Here is a super easy way to get your crunch on! Perfect for a protein snack and can be put on top of salads, soups, or in grain bowls. Eat a handful at a time to satisfy your taste buds and snack time!

Prep Time: 5 minutes | Cook Time: 30 minutes | Total Time: 35 minutes

Ingredients:

  • 1 15oz can of chickpeas
  • 1 tsp salt
  • ½ tsp black pepper
  • ¾ tsp paprika
  • ⅛ tsp cayenne pepper
  • 3 tbsp olive oil
  • 1 tbsp lemon juice

Directions:

  1. Preheat oven to 425 F.
  2. Rinse the chickpeas and dry them well with a paper towel.
  3. In a bowl, combine chickpeas, salt, pepper, paprika, cayenne pepper,  garlic powder, olive oil & lemon juice. Coat chickpeas evenly with the seasoning.
  4. Line a baking sheet with parchment paper OR spray lightly with cooking spray.
  5. Place the chickpeas on the pan and spread in a single layer.
  6. Roast for 25-30 minutes, until golden.
  7. Get crunching!  🙂

Recipe Notes:

Keeps in an airlock container or ziplock bag in fridge for 3-5 days.
