Chickpea Salad

This fresh and easy to make salad is packed with all you need to keep you satisfied and ready to rock your afternoon or evening. Once you try it, I bet it will be added to your summer recipe collection! It is colourful, full of protein, nutrients, and even gluten free. So, what are you waiting for? Get prepping!

🍅 🌿 Ingredients: 

  • 2 cups grape tomatoes, halved
  • 1 cup of yellow(green) and orange bell peppers, diced
  • ⅓ cup of cheddar
  • ⅓ cup of Feta, diced
  • 2 cups of canned chickpeas, rinsed and drained
  • 4 green onions, finely chopped
  • ¼ cup chopped fresh basil
  • ¼ cup fresh lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. Place grape tomatoes, peppers, cheese, chickpeas, onions, and basil in salad bowl.
  2. Toss gently.
  3. Whisk together lemon juice and olive oil.
  4. Mix into salad.
  5. Season to taste. 

This recipe will yield up to 6 servings. Enjoy!  🙂
