Baila Breakfast Cookie

These dense but easy to digest cookies are amazing fuel to power the start of your day. They can also be an excellent pre or post workout treat. Packed with real food and healthy calories, you will want to give them a whirl ;) Easy to freeze, and great as an on the road snack to keep your engine running!

These dense but easy to digest cookies are amazing fuel to power the start of your day. They can also be an excellent pre or post workout treat. Packed with real food and healthy calories, you will want to give them a whirl 😉 Easy to freeze, and great as an on the road snack to keep your engine running!

Ingredients: 

  • 4 cups of rolled oats
  • 1 ½ cups of whole wheat flour (or almond flour)
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 ripe bananas
  • 1 cup raw sugar or coconut sugar
  • ⅓ cup coconut oil
  • ¼ cup plus 2 tbsp water
  • 2 tbsp ground flax or chia seed (or 1 of each)
  • 2 tsp vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup unsweetened shredded coconut
  • 1 cup raw walnut pieces
  • ½ cup raw sunflower seeds

Optional ingredients:

  • Pumpkin seeds instead of sunflower
  • Shredded coconut – omit if not your flavour
  • Pecans or almonds instead of walnuts

Directions:

  1. Pre heat oven to 350F.  Line two baking sheets with parchment paper or grease.
  2. Place 2 cups of oats in a blender/food processor and blend until finely ground. Transfer to a large bowl.  Add flour, baking powder, salt, and remaining oats. 
  3. Combine bananas, sugar, oil, water, chia seeds, and vanilla in the blender/processor.  Add to the oat mixture and stir until blended. Now add the chocolate chips, nuts, seeds, and coconut. 
  4. With wet hands, make approx ¼  cup dough into balls. Flatten them to ¾ to 1 inch thick and divide between the two baking sheets.
  5. Bake for 30 minutes, or until golden brown.  Allow to totally cool down before removing from the baking sheets.  Store in an air tight container for up to a week or freeze. Wrap up for taking on the go.
